Yoghurt, berries, chocolate granola, peanut butter, banana and honey, all layered to perfection. The individual tastes and textures of all these different ingredients combine flawlessly in this parfait.
In case you are wondering what a parfait is….
The dish originated in France and is a frozen dessert which is made by cooking eggs, cream, sugar and syrup to create a custard-like puree. This is then usually served in a parfait glass.
Nowadays the term is used more lightly and is normally used to describe anything containing ice cream, whipped cream, fruit or yoghurt which is then layered and served in parfait glasses.
This chocolate berry yoghurt parfait is another recipe which fell together perfectly in an accidental kind of way. It’s just a super delicious thing which is healthy and wholesome, full of delicious ingredients which will nourish you from the inside out, tastes like a decadent dessert and looks really beautiful and fancy on the table as well – basically there are no negatives, it’s just really good 🙂
Perfect for breakfast, brunch, afternoon tea or dessert.
I made this at Easter and served it in my really pretty ice cream sundae glasses, but you could serve it in anything. Just normal glasses or even small bowls would work as well, if that’s all you have to hand. Anything made of glass is ideal though because the layers look really beautiful and aesthetically pleasing, so you want to showcase them if at all possible.
Chocolate berry yoghurt parfait
Ingredients:
Frozen mixed berries (slightly defrosted) or fresh berries
Yoghurt
Chocolate granola
Banana
Peanut butter
Honey, hazelnut and coconut (for topping)
How to assemble:
1. Line up all your glasses and spoon approx. 2 tbsp of frozen/fresh fruit into the bottom of each glass.
2. For the next layer spoon 2 tbsp of yoghurt on top. Sprinkle a thin layer of granola on top of the yoghurt.
3. Cover the granola with a layer of sliced banana (about 5 slices) and then drizzle 1/2 tsp of peanut butter on top of the banana.
4. Repeat the first three layers (cover banana and peanut butter layer with a layer of berries, yoghurt and granola).
5. Top everything off with some hazelnuts (or other nuts of choice), coconut flakes and a generous drizzle of honey.
And you’ve got a very simple and quick, very delicious and wholesome, and very aesthetically pleasing parfait!
Notes/tips:
-the chocolate granola could be substituted for any kind of granola you have at home. If you don’t have chocolate granola but still want all the same flavours, just use some plain granola and add some grated dark chocolate to the layers.
