Not many people don’t like chocolate chip cookies. In my opinion they are a very safe (and yummy) thing to bake anytime – there will always be someone who will like them a lot.
They are also conveniently quick to prepare and only take 10min to bake in the oven so you can whip them up really quick in no time at all! My siblings definitely use that to their advantage. They’ll approach me with the argument “Oh, but they don’t that long to make do they?” I’ve even made these with my baby sister, they’re that simple!
Chocolate Chip Cookies
Ingredients
2 cups flour
1 tsp baking powder
1/2 tsp salt
Just under 1 cup melted butter (not too hot)
3/4 cup sugar
1 tsp apple cider vinegar
1 large egg
1 tsp vanilla (optional)
6 squares dark chocolate (approx. 60g), chopped small
Sprinkle of sea salt
Method
1. Preheat oven to 180C and line a tray with baking parchment. Combine the flour, baking powder and salt in a small bowl
2. In a large bowl, whisk the melted butter, apple cider vinegar and sugar until well combined and smooth. Add the egg and whisk until just combined.
3. With a wooden spoon stir in the flour mixture until just combined. Stir in the chocolate chips.
4. Spoon generous tablespoon-fulls onto the tray with space in between for them to expand (leave the cookie dough all heaped up, don’t be tempted to press it down to make it into a ‘cookie shape’). You can use a cookie scoop if you have one.
5. Bake at 180C for 8-12 minutes until the edges are going slightly brown but the middle still feels underdone. Take the cookies out of the oven (they will continue cooking after you take them out) and sprinkle each cookie with a little salt. Leave the cookies to cool for at least 10min on the tray before eating or moving to a rack to cool.
