A super quick and simple dinner which everyone will enjoy! There is sweetness, spiciness and lots of flavour in this dish, but not too much of anything, making sure that everyone can and will enjoy this. Even my little baby sister enjoyed it! Her favourite part was the chickpeas, as she’s not such a massive fan of ‘green food’.
The fact that this meal is ready in under 30 minutes makes this recipe particularly attractive!
Broccoli stir fry with a sweet, sour, spicy, super tasty sticky sauce, inspired by asian cuisine, combined with plant-based protein from the chickpeas makes this meal delicious and balanced in the best way 🙂
Sticky Chickpea And Broccoli Stir Fry
Serves 6
Ingredients
2 tbsp oil
2 small onions
6 cloves garlic
1 tbsp ginger, finely grated
2 tsp paprika
1 tsp cumin
Generous pinch cayenne pepper
Salt and pepper
1 head broccoli, chopped into small florets
180ml veg stock
500g chickpeas
1 tbsp flour
Sticky sauce:
5 tbsp soy sauce
100ml water
4 tbsp balsamic vinegar
1 tbsp sweet chilli sauce
1 tbsp ketchup
2 tbsp syrup
1 tbsp brown sugar
For serving:
1 big mug basmati rice (300g) (or noodles or naan)
Method
1. Heat the oil in a skillet or large saucepan and sauté the onion for 3 min. Add the ginger, garlic and spices. Sauté for another 3-5 min. Add a drop of water if your pan gets too dry.
2. Add the veg stock and broccoli. Cover the pan with a lid and cook for 8-10 min, until the broccoli is just cooked but not too soft.
3. Put your rice on to cook and whisk all of the sticky sauce ingredients together in a small bowl or jug.
4. Add the sauce, chickpeas and 1 tbsp flour to your broccoli pan. Stir and simmer for another 2-3 min. Taste and season with extra salt, pepper or cayenne pepper as needed.
5. Now you can either stir in the rice so that the rice is coated in all of the yummy sauce and all of the flavours mingle nicely, or you can keep them separate and serve the chickpea broccoli sauce over the rice. Or with something completely different, like noodles or naan if you like 🙂
Notes/tips:
– Sliced red bell pepper would be a great addition if you wanted to add a bit more vegetables and a nice splash of colour. Just add the pepper to the pan at the same time as the broccoli.
